Well, I promised you my favorite recipe for BBQ ribs and here it is! Ever since I discovered a recipe for a dry rub in the "Cook's Illustrated" book, I have used it all the time, it's even great on a pork shoulder or butt for pulled pork.
When we lived in California, I used a gas grill all the time and these ribs are delicious grilled or smoked in the outdoors. However, now living in Massachusetts, I've given up fighting with the mosquitos, and now bake my ribs in the oven. Rubbed with a flavorful mix of herbs and spices, the ribs are tightly sealed in a foil package, so they bake and steam to a fall off the bone, tender and moist, finger lickin......... get the picture!!

Oven Baked BBQ Ribs
(Serves 2 - 3)
Ingredients:
Spice rub mix:
2 tablespoons paprika
1 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon dark brown sugar
1 tablespoon salt
2 teaspoons dried oregano
2 teaspoons sugar
2 teaspoons black pepper
1/2 teaspoon garlic powder
1 rack baby back or pork spare ribs

Oven Baked BBQ Ribs
(Serves 2 - 3)
Ingredients:

2 teaspoons dried oregano
2 teaspoons sugar
2 teaspoons black pepper
1/2 teaspoon garlic powder
1 rack baby back or pork spare ribs
Directions:
- Prepare dry rub mix: Just mix together all the ingredients and store in sealed container. Any extra mix can be stored in a dry place for future use.
- Prepare ribs: Wipe the ribs dry using paper towel, then turn the rack over and remove the membrane of skin from the bottom side - see photo. This allows the spices to penetrate the meat.
- Line a large baking dish with enough foil to wrap the ribs into a package .
- Lay the ribs on the foil and sprinkle both sides liberally with spice mix and rub into the meat.
- Seal the foil to make a neat package, this will keep all the steam inside while the ribs are cooking in the oven.
- The ribs can now be marinated in the fridge for a couple of hours, or baked immediately.
- Bake the ribs in a preheated oven at 350 degrees Fahrenheit for 1 1/2 to 2 hours.
- Unseal the foil package and bake uncovered for another 30 minutes. You can brush the ribs with your favorite BBQ sauce at this point.
- Serve and enjoy!
