Macaroni with Ham and Cheese

My girls have been begging me to make this for the blog because this has been a childhood favorite for me and for them. I think my Mum came up with the recipe, which is a homestyle skillet version of Mac N'Cheese, and can be made in a matter of minutes.

We usually add ham or bacon and onion, but you can add anything you happen to have in the fridge! I like to add something green, so I often throw in a handful of peas. It may seem a little strange to add tomato ketchup, but it adds a great tomato flavor and we always have a bottle in the fridge. So, for a quick and easy meal, try our version of macaroni. Macaroni with Ham and Cheese(Serves 4 - 6)

Ingredients:1 tablespoon oil, vegetable, canola or olive
1 medium onion, peeled and diced
1 cup lean ham, diced
1/2 cup frozen peas or mixed veg, defrosted
1/4 cup tomato ketchup, or to taste
1/2 cup milk
1 lb. elbow macaroni, cooked
1/2 - 1 cup Cheddar cheese, grated
Black pepper


Directions:
  • Heat the oil in a large skillet over high heat, cook the onion and ham until tender. Add the peas or mixed veg.
  • Stir in the cooked macaroni and tomato ketchup.

  • Add the milk, reducing heat to medium and stir until reheated. More milk more be added at this stage if you like. Season with freshly ground black pepper - salt may not be necessary if using ham or bacon.
  • Remove from heat and stir in the cheese until melted. Serve immediately with grated parmesan if desired.
