Pumpkin Apple Streusel Cake


If you were looking for a really delicious pumpkin cake recipe, you've come to right blog! This is a true, tried and trusted recipe that I've been making for many years, adapted from epicurious.com. The cake is basically a pumpkin cake topped with an apple crisp layer, it's a wonderful combination. If you have a food processor, then that's the only machine you'll need. When you start making the cake batter, don't forget to set a little aside for the streusel topping, then you can continue adding the remaining ingredients.

It's also been a popuar recipe with me because it can be baked in many guises. I've made it in loaf tins to give away at Thanksgiving or Christmas, on a baking sheet to cut into squares for parties and even triple recipes in hotel pans for church auctions. Today I made it in an angel food cake pan - I love making cakes in it because they cook evenly and you'll never get a soggy middle. This recipe has never failed me and Claire asked me to bake it as dessert for tomorrow's duck feast - it's fabulous with a scoop of vanilla icecream. Hope you enjoy it as much as we do!

Pumpkin Apple Streusel Cake
(Serves 12)
Ingredients:
Apple Layer:
3 tablespoons butter
4 cups (5 or 6) apples, peeled, cored and diced (I used a mix of Granny Smith and Macintosh)
3 tablespoons sugar
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg

Cake batter:1 1/2 cups all-purpose flour
1 cup brown sugar, packed
1 stick unsalted butter, cut into cubes
1/2 teaspoon salt
3/4 cup canned pumpkin
1/3 cup sour cream
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground cloves (optional)
2 large eggs

Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • Grease 9 inch springform pan or tube pan with non-stick spray.
  • Cook the apples: Melt the butter over medium heat in a skillet, add the apples, sugar, cinnamon and nutmeg. Cook for approximately 5 minutes until golden brown. Set aside to cool.
  • Prepare cake batter: Combine flour, brown sugar, butter and salt in food processor. Pulse until the mixture resembles breadcrumbs. Remove 2/3 cup of the mixture and set aside for the streusel.
  • Add the pumpkin, sour cream, sugar, baking soda, spices and eggs to the remaining mixture. Process until well blended and smooth, scraping down the sides once or twice.
  • Pour the batter into prepared pan.
  • Scatter cooked apples atop the cake batter.

  • Finally sprinkle with the reserved streusel mixture.
  • Bake in preheated oven for approx. 1 hour or until a toothpick, inserted in the middle of cake, comes out clean.
