Cheddar Chive Biscuits



Try this quick and easy recipe for a delicious biscuit. We were having salad tonight for dinner and these biscuits were an ideal accompaniment.



The clump of chives in my garden is growing nicely and I always try to keep a bottle of buttermilk in the fridge for pancakes, banana bread etc., and it can last a week or two in the fridge. If you don't happen to have any buttermilk, you can use milk but you'll have to leave out the baking soda. So, please don't buy those biscuits in the tube! You can make these in just the same amount of time.

Cheddar Chive Biscuits(Makes 8)

Ingredients:2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoon unsalted butter, cold and cut into 1/2 inch cubes
1/2 cup sharp or mature Cheddar cheese, grated
2 tablespoons fresh chives, thinly sliced
1 cup buttermilk
Directions:
  • Preheat oven to 400 degrees Fahrenheit.
  • Mix together the flour, baking powder, baking soda and salt in a large mixing bowl with a wire whisk. (A food processor may be used)
  • Add the butter and using fingertips, rub into the flour until the mixture resembles oatmeal.
  • Stir in the grated cheese and chives.
  • Add the buttermilk gradually, mixing with a spoon or spatula, until the mixture forms a ball.
  • Turn onto a floured work surface and knead 2 or 3 times until smooth.
  • Roll out the dough to about 3/4 inch and cut out 3 inch circles.
  • Place on greased baking sheet and bake for 10 to 12 minutes or until golden brown.
