I had seen a recipe for apple skillet cake recently, on the King Arthur's flour blog http://blog.kingarthurflour.com which looked really quick and easy. But I had 3 black plums staring at me from the fruit bowl, so I decided that they would do very nicely instead.
The cake is a batter made with melted butter and milk and one egg, so I mixed everything very quickly in the food processor. It would even be very easy to make this recipe with a whisk or wooden spoon. Of course, this recipe serves as a base for any seasonal fruit - raspberries, blueberries, apples, rhubarb, the list is endless! As you can see, the resulting cake came out perfectly baked in my cast iron pan, but you can also use a regular cake pan. Enjoy!
Easy Plum Skillet Cake (Serves 6-8)
Ingredients:
1 1/3 cups all purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon table salt
6 tablespoons melted butter
2/3 cup warm milk
1 egg
1 teaspoon vanilla
3 black plums, sliced
1 tablespoon sugar
1/2 teaspoon cinnamon
Directions:
- Preheat oven to 350 degrees Fahrenheit. Grease a 10 inch cast iron skillet or 9 x 13 inch cake pan with non stick spray.
- Sift the dry ingredients - flour, sugar, baking powder and salt into a large mixing bowl or food processor.
- In a separate bowl, mix together the warm milk, melted butter, egg and vanilla.
- Add the milk mixture to the flour and mix well.
- Pour the batter into the greased skillet or cake pan.
- Arrange the plums or your choice of fruit, onto the batter. Sprinkle with remaining sugar and cinnamon.
- Bake in preheated oven for 40 - 50 minutes or until golden brown and when a skewer inserted in the middle comes out clean.
- Allow to cool on wire rack for 10 minutes before serving with custard or ice cream.
