Yes – we call them pancakes. The Brits love to eat them on Shrove Tuesday (or Pancake day) and we serve them rolled up with a squeeze of lemon and a dusting of sugar. Yummmm….
Almost everyone has eggs, flour, milk and oil in the house and you don’t even need any fancy equipment – just a small skillet and a whisk. Of course, these pancakes are not the same as American pancakes, because they have no baking powder and do not rise. Hence the term as flat as a pancake! The secret to this recipe is to make the batter as thin as whipping cream, then the pancakes will be as light as a feather.
You can just serve them the English way or add fresh fruit and whipped cream or just a fruit jam. If you have a jar of Nutella, try a thin layer on a hot pancake, your kids will be screaming for more. If you want to get your kids interested in cooking, then make this recipe together – they’ll love swirling the batter and trying to toss them. This is the simplest and fastest dessert to make and I guarantee will please everyone at your dinner table.
English Pancakes
Ingredients:
1 cup all purpose flour
pinch salt
2 large eggs
1 1/2 cups milk
1 tbs. canola or sunflower oil

Directions:
- Whisk together the eggs, flour, salt, milk and oil until the mixture is the consistency of cream. This can also be done easily in a blender. Pour the mixture through a sieve to remove any lumps.
- Heat a 6 or 7 inch non-stick skillet or omelet pan over medium heat and lightly oil or spray the bottom of the pan.
- Using a small ladle, pour a small amount of batter in the pan, swirling at the same time, so it just coats the bottom of the pan. Be careful not to add too much batter, you can pour any excess out. Cook for one minute or until the edges start turning brown. Flip, turn or toss and brown the other side for a further 1/2 minute.
- Turn onto a dinner plate and continue making crepes until all the batter is used. Cover with a towel to keep warm or interleave with parchment or wax paper for freezing.
