Acton Community Supper


I was so excited to help cook an authentic Moroccan meal on Wednesday for Community Supper here in Acton. I am a co-director for this wonderful non-profit organization and we cook meals every Wednesday for anyone who is hungry.  We are lucky enough to have much of our food donated by our local community, and supplemented by the Boston Food Bank, but this week 3 families from Leominster, offered to provide, cook and serve the food to celebrate Ramadan.   Fronted by Hasssan, our executive chef of the day, we peeled, chopped, sauteed and braised for 2 hours and the resulting meal was really incredible.

Hassan planned to make not one, but 2 stews, one with beef and the other with chicken, each loaded with fresh vegetables, chickpeas, raisins and flavored with saffron, cumin, cinnamon, parsley and cilantro.


The stew was served with fragrant couscous, which was steamed in the flavorful broth taken from the stew.  Our guests were so appreciative of their dinner, that Hasssan and his friends were given a standing ovation.

Even our Pantry Director, Kathy, said to Hassan, about the evening:
"Your generous and compassionate views toward those in need manifested themselves last night in the energy and joy you all brought to the Supper! Not only was the food delicious, but the place was lit up by your enthusiasm. You provided both nutritious food and an uplifting atmosphere for our guests; thank you for that."


All in all, it was a night to remember and I now have a wonderful recipe for a Moroccan Couscous dinner. Thanks again to Hassan, his family and friends for their generosity and goodwill.
