ATR - Day 30 (Bundt Pan Chicken)

I have started my exercises as instructed by by Physical therapist and I'm feeling much more confident. I was pretty nervous about taking off my boot, in case I fell over and damaged the tendon again, but now that I can actually move the ankle a little more, it doesn't feel so fragile. My next appointment is on Monday and I'm looking forward to seeing what he will try next.

I have finally finished my book "Pillar's of the Earth" but the ending was a bit of a let down, however, the characters were quite colorful and interesting. If I read the sequel, I'll remember to get the paperback, the hard cover was so heavy that it hurt my wrists! No wonder, the kindle is gaining in popularity.




So, I was surfing the "blog net" and came across a recipe for roast chicken cooked vertically in a bundt pan! I realized what a great idea it was, especially as I love the crispy, brown skin of rotisserie chickens. I do have a weird metal contraption in my kitchen, that uses the same concept, but has never been very sturdy and has been known to fall over occasionally. In addition to cooking the chicken, vegetables such as potatoes can be placed in the bottom of the pan and they get cooked at the same time.

I'm not going to give you a recipe, just a few of the things I did to make the delicious creature above.

Bundt Pan Chicken
  • Preheat oven to 375 degrees Fahrenheit.
  • Dry and season whole chicken inside and out (salt, pepper, garlic, herbs, lemon etc.)
  • Place veggies in bottom of bundt pan (optional)
  • If there's a hole at the top of tube, cover with foil.
  • Stand the chicken in the pan, tucking back the wing tips and drizzle with olive oil.

  • Bake for 1 - 1 1/2 hours basting occasionally with the juices, which collect in the bottom. (Wine or beer can poured in to the pan to add more flavor to the basting juices)
  • Chicken will be ready when juices run clear or temperature of thigh meat reaches 165 degrees.
