ATR - Day 43 (Fish Tacos)




Yeah!! It's 6 weeks since my surgery to repair my ruptured Achilles Tendon. Doesn't time fly when you're having fun and doing NOTHING!?

My twice weekly physio therapy sessions are going well and I have a heap of exercises which I have do twice a day. They are mainly stretching the tendon and strengthening my quad (thigh) muscle, which isn't getting much action at the moment. I still ice my foot down after every session, which helps to alleviate the swelling. Unfortunately, the incision started to ooze a little after the scabs started falling off and after seeing the Orthopedic surgeon on Tuesday, she prescribed oral antibiotics and an antibiotic cream to rub onto it. Luckily, I have no pain and hopefully, the infection will clear up soon.

My CAM boot has now been turned down to 20 degrees and I have been instructed to reduce it by 5 degrees over the next few days until I feel comfortable walking on it. If all goes well, I hope to be in 2 shoes in 2 weeks time AND DRIVING!


I made Fish Tacos for dinner tonight in 30 minutes flat! Here's how I did it....
  • I made coleslaw with finely sliced cabbage, then seasoned it cider vinegar, sugar, salt and pepper. Add enough low fat mayonnaise just to coat.
  • For 2 people, I cut one filet of catfish into small slices and tossed them in one tablespoon of flour and one tablespoon of taco seasoning. Cook in non-stick pan with one teaspoon canola oil on high until golden.

  • Assemble tacos - Warm wholewheat tortilla in dry skillet over medium heat, pile the fish and coleslaw down the middle and top with your favorite salsa. Enjoy!
