ATR - Day 29 (Homemade Granola)

It's 4 weeks today since I had my surgery. Yesterday I went to my first Physical therapy appointment here in Acton. I'm pleased to say that I now have a few exercises to do and I am allowed to put a little weight on my foot when walking. I've been told to ice down my ankle twice a day to help with the swelling, which is nice because I get to take off my boot more often. So, now with PT scheduled twice a week, I can at last see the light at the end of the tunnel.

I'm almost 3/4 of the way through my book "Pillar's of the Earth" and it's quite a page turner! I think it will make a great movie and look forward to watching it.




So, with so much time on my hands, I've started cooking again and this is a great granola recipe that I love. You will never go out and buy store bought granola anymore after you've tried this and it's so easy. The best part is that you can customize or substitute the recipe with all your favorite ingredients. I love to eat it with plain non-fat yogurt and fresh fruit. Hope you like it!

Homemade Granola (Makes 9 cups)
Ingredients:
1 x 18 oz box or 5 cups old fashioned oats
1/2 cup ground flax
1 cup whole almonds
1 cup walnuts
1/2 cup sweetened coconut
1/3 cup canola oil
3/4 cup honey or maple syrup
1/2 cup raisins
1/2 cup dried cranberries

Directions:
  • Preheat oven to 350 degrees Fahrenheit.
  • Combine the oats, flax, almonds, walnuts and coconut in a large mixing bowl.
  • In a separate bowl or pan, heat the oil and honey (or maple syrup) until warm and runny.
  • Add the oil and honey mixture to the oats and stir together until evenly coated.
  • Transfer the mixture to a parchment lined baking tray.

  • Bake in preheated oven for 30- 40 minutes, turning 3 or 4 times until golden brown. Add the raisins and cranberries, or dried fruits of your choice.
  • Allow to cool and pack in air tight containers.
